First let me thank you personally for purchasing a BLOX product. Please take some time to read and understand the following instructions. It will help you get the most from your BLOX.
Caring for Your New Butcher Block
To begin
Season your new butcher block or cutting board by applying BLOX oil and letting it soak into the wood for 30 minutes. (Do not use vegetable oil, olive oil etc... for it will turn rancid) Apply 5 to 6 coats before using the block, allowing at least 30 minutes between applications. After the initial seasoning, you should oil your block every week or two depending on use. If you allow your block to become dry it may begin to crack or split.
Cleaning and Sanitizing
Wash your cutting board or butcher block with hot soapy water after each use and dry it with clean paper towel or let it air dry. (Never store your block before it has dried completely) If you require more sanitization, especially after cutting raw meat, spray a mist of 5% vinegar solution (strength bought in super markets) over the surface. Let this stand for 2 or 3 minutes then wash as usual. (Do not immerse in water and do not put into a dish washer.) I don’t even put my boards in the sink. Just use a wash cloth to soap and rinse.
Stains
Sprinkle kosher salt or table salt on the block and then use a damp sponge or wash cloth to rub the stain. For stubborn stains, try sanding down the area with a fine grit sand paper. Always sand with the grain (edge grain boards) never against it. Once sanding is complete re-oil the block.
Odors
Sprinkle a little salt over the block. Cut a lemon into halves and rub them into the block, squeezing juice into the block as you go. Let this sit for 2 or 3 minutes and then clean with a damp cloth. Dry thoroughly before storing.
Continuing Care
For new blocks and boards oil them once a week for the next 6 weeks. If you feel the grain raise slightly, lightly sand the block with 320 grit sandpaper or higher until the surfaces are smooth again, then re-oil the block.
A Bunch of "Do Not's"
Do not allow moisture of any type to remain on the board for extended periods of time. Don’t let fresh meat lay on the board any longer than necessary. Remember, water is the enemy.
Do not cut fish or fowl on the block unless the moisture barrier is intact. (Apply a fresh coat of BLOX oil prior to use)
Do not cut in the same place on the block. Distribute cutting over the entire surface of the block to promote even wear.
Do not use harsh detergents of any kind to clean the block.
Do not use razor edged cleavers as they will chip and splinter the wood and leave soft spots in the block.
Do not use a wire brush on your block.
